Para ello se mejorar\u00e1 el sistema tradicional de curaci\u00f3n consiguiendo un pieza de jam\u00f3n con una conformaci\u00f3n uniforme, f\u00e1cil de lonchear, sin imperfecciones y con posibilidad de comercializarlo en piezas completas, medias piezas, cuartos, octavos y lonchas.<\/p>\n<p>CONVOCATORIA: Proyecto en cooperaci\u00f3n dentro de la convocatoria RETOS &#8211; COLABORACI\u00d3N 2017<\/p>\n<p>ACUERDOS: Es un proyecto a cuatro a\u00f1os desarrollado en base a la colaboraci\u00f3n establecida entre la empresa Aorma Ib\u00e9rica SSerrana, S.L., el Centro Tecnol\u00f3gico del Metal y la Universidad San Antonio de Cartagena.<\/p>\n<p>FASES: Duraci\u00f3n 35 Meses (Abril de 2018 y Marzo 2021)<\/p>\n<p>RESULTADO 1\u00aa FASE:<\/p>\n<p>Durante la primera anualidad se ha realizado una b\u00fasqueda bibliogr\u00e1fica sobre los distintos cambios en el proceso que podr\u00edan incrementar el aroma del jam\u00f3n, la concentraci\u00f3n de p\u00e9ptidos bioactivos y la reducci\u00f3n del contenido en sal. Se han puesto a punto las t\u00e9cnicas necesarias para la caracterizaci\u00f3n f\u00edsico-qu\u00edmica, composicional, microbiol\u00f3gica bioqu\u00edmica y sensorial de\u00a0 los jamones obtenidos.<\/p>\n<p>Se ha dise\u00f1ado, en base\u00a0 a la revisi\u00f3n bibliogr\u00e1fica realizada, un nuevo proceso para obtener jamones deshuesados\u00a0 a partir de cerdo ib\u00e9rico reducido en sal y ricos en p\u00e9ptidos bioactivos. Se han modificado algunas condiciones del mismo como el tiempo de salado, la granulometr\u00eda de la sal y la humedad y temperatura en las fases de secado y bodega.<\/p>\n<p>Se ha empezado a evaluar la efectividad del citado proceso realizando un seguimiento de los par\u00e1metros composicionales, microbiol\u00f3gicos, bioqu\u00edmicos y sensoriales de los jamones elaborados.
